Make eggplant salad as in Crete

Unique Creta, suggests you to taste an appetizer served on the island making it with the traditional cretan recipe. So, try to make the wonderful eggplant salad.

The materials you will need are:

1/2 kg large eggplants

1 cup of olive oil

the juice of one lemon

two or three cloves of choped garlic

some choped feta cheese (optionally)

salt and pepper

The doing

We pierce the eggplants with a fork and bake them whole in the oven, on low heat until their skin turns black. Τhen we clean the burnt skin and put the eggplants in a bowl. Add the salt, pepper and lemon juice and stir the mixture for a while. Gradually we add the garlic and oil, continuing to stir our mixture until it is uniform. Αt the end, if we want, we add the chopped feta cheese.

Your salad is ready.
